Motichoor Ladoo recipe
Motichoor ladoo comes under popular Indian sweet dish. It is very important part of any Indian festival like Ganesh Chaturthi, Navratri and Diwali. Motichoor ladoo is made from tiny besan balls dipped in sugar syrup and then it is transformed into a lemon sized ball known as ladoos.
Generally, we think that it is very tough to make motichoor ladoo at home but trust me it is not. The key factor of this ladoo recipe is its batter so try to make a perfect batter for it.

Cooking Time: 30 Mins
Serves: 15- 20 Ladoo
Ingredients:
Besan: 1/2 kg
Milk: 1/2 cup
Pistachios: 1 tbsp.
Melon seeds: 1tbsp.
Sugar: 1/2 kg
Baking Powder: A pinch
Orange Color: Few drops
Desi Ghee for deep frying
Method:
Sift together besan and baking powder.
Make a thick batter by mixing 2 tbsp. of ghee (melted) and sufficient water.
Melt ghee in a kadhai and drop boondis of the batter with the help of a perforated spoon.
Fry boondis till light brown.
Prepare sugar syrup of 1-string consistency.
Mix color to the sugar syrup.
Transfer the boondis into hot sugar syrup& mix well them in syrup to cover all the boondies.
Add Melon seeds and chopped Pistachios.
Allow the mixture to cool.
Grease your palms with ghee and make laddoos.
For Sugar syrup:
Boil the water and sugar in a sauce pan, stir to dissolve the sugar, add the milk and when the scum rises to the top, remove it.
Important Notes:
It keeps well for seven days in room temperature itself.
The boondi takes in a lot of ghee so drain each batch of boondi over tissue paper for absorbing extra ghee.
For deep frying of boondi, instead of desi(pure) ghee you can also use vanaspati ghee/oil/desi ghee plus vanaspati ghee.
If your grater is very fine, then you can avoid blending the boondi to coarse powder.
Ensure that you attain 1 string consistency of sugar else you will not be able to prepare ladoo.
Put some drops of syrup on the back side of bowl & if it coats the surface of bowl without dripping it, its mean that sugar syrup is ready for preparing laddoos
Oil your hands with ghee to keep from sticking.
You can also use Saffron in place of orange color.
Some suggestion for serving:
For Sweet boondies: Decorate the boondies with cut almonds and pistachios.
Garnish with chocolate gnash.
Present with vanilla dessert.
Different ways to serve boondi:
With yogurt to make raita a prominent side dish. (To serve Boondies as raita or salted snack don't include the boondi in sugar syrup. They make a crunchy dish.)
Serve them as salted snack adding chat masala.
