Dosa, a famous south Indian dish, we can also make it from Kuttu Ka Atta during the any fast.

Kuttu Ka Atta (Buckwheat Flour) Dosa




During the Navratri fast, kuttu ka atta is used for preparing the food, but are you aware that you can make a very crispy and healthy dosa from it. Dosa batter is prepared with boiled Colocasia (Arvi/Arbi) and potato is filled in dosa. You can enjoy this with coconut chutney. Here is a delicious and quick recipe of Kuttu Dosa.



Ingredients:

For Dosa Filling:

Potatoes 3, (boiled & crushed)
Ghee (For Frying)
Rock Salt ½ T Spoon
Red chili powder ½ Tsp
Ginger, chopped into pieces ½ Tsp


For Dosa Batter:

kuttoo ka aata 5 tablespoon
Colocasia (Ghuiyan/Arbi) ½ Tsp
Rock Salt ½ Tsp
Carom seeds (Ajwain) ½ Tsp
Red chili powder 1 Tsp
Ginger 1 Tsp
Green chili, cut into pieces 1 Tsp
Ghee



Method:

To make the filling of potatoes:

1. Heat ghee in a pan put the boiled and crushed potatoes in it, then mix well all the spices in it.

2. Roast the mixture for a few minutes so that it becomes light brown.

3. After that take out it from pan and keep it aside. 

To make dosa:

1. Mash the Arbi in a bowl, after that mix kuttu flour and rock salt with the arbi.

2. Add little water and mix it well.

3. Put Carom seeds, red chili powder, ginger, & green chili and mix it again.

4. Add some water to it and mix well. To make a smooth batter, keep adding water and stirring in one direction.

5. Take a flat pan and heat it on gas, with some of the ghee, pour a ladle full of batter on it and spread it.

6. Let it cook for some time and spread some more ghee around to the edges so that the crisp dosa is formed.

7. Then flip it over and cook the other side.

8. Now, place a tablespoon of filling on the middle of the dosa and fold it over.

9. Serve hot with coconut chutney.




Recipe Note:

If you want, you can also use cheese filling instead of the potato filling in the dosa.

You can also prepare plain kuttu ka cheela from this mixture without any filling.
